Black Pepper Tofu

I found a recipe that looked good to me, but couldn't find most of the ingredients it called for, so I went ahead and made up my own.  We really enjoyed it.

Black Pepper Tofu

Ingredients:
2 packages extra firm tofu, cut into 1" cubes
Veg oil for frying
Cornstarch to dust tofu
4 T butter
11-12 small shallots, thinly sliced
3 bell peppers (red, orange, and yellow) vut into 1" pieces
7 cloves of garlic, crushed or minced
2.5 T powdered ginger
3/4 c soy sauce
1/4 c brown sugar
2 T freshly ground black pepper
1 bunch scallions (bright green parts) cut into 1" pieces

Use enough cornstarch to cover tofu cubes, dust off excess. Heat oil in a large skillet, enough to cover the pan 1/8". Fry tofu in batches until it has a nice crispy crust. When finished, dump out oil and sediment from pan.

Melt butter in skillet, add shallots, peppers, garlic and ginger, saute 15 min. Add soy sauce, sugar and black pepper.

Add the tofu back in and mix. Garnish with scallions. Serve with jasmine rice.
